Our Latte’s in the Paper

So the Trib PM had a write up today on latte art.  They interviewed the fine folks at Aldo Coffee and they also stopped in to interview me.  Here’s an excerpt:

latteartstory Self-taught latte artist Luke Shaffer, 31, owner of 21st Coffee and Tea in the Strip District, said he’s been doing latte art for a year and a half.

“One day, I figured out what I was doing wrong, kind of the light bulb moment, and all of a sudden it’s working,” Shaffer said. “Then you start showing off and doing stuff for customers because it’s fun.”

Some 21st Coffee regulars have come to expect it.

“We gave him a hard time one time when he didn’t do it,” joked Kalman Pelhos, 39, of Squirrel Hill. “It’s much like going to a French restaurant — you have a certain appreciation for the presentation and not just the taste of the food.”

“People ask, ‘Did you do that on purpose?’ and sometimes we joke around and tell them it was an accident,” Shaffer said.

Our First Latte Art Video

A reporter from the Trib PM was doing a story on latte art and contacted us for an interview. I rambled on quite a bit about coffee, direct trade, milk, independent shops in the area and a bunch of other stuff- but I do think the write up will primarily focus on latte art.

It should be in Thursday’s Trib PM, barring any late breaking Roethlisberger contract details :)

Soooo the Trib also sent someone down to shoot some photos for the write up and video for the online version. So in between making drinks for customers I poured four or so example drinks. Below is the montage

I had a couple of good ones- the rosetta at the beginning was my first pour and the still of the tulip at the end turned out nicely. The triple (Mary’s idea) kind of blew up on me and there were too many customers coming in to give it another go. I guess that’s what the latte art competition is like- you get a limited window, pressure’s on, so you do it or you don’t.

I would also like to add that the gentleman that shot the video paid for a couple of the drinks that I made so he could take them back to the office. By the time he was ready to go the drinks we had put into to-go cups were gone! It appears there is a latte thief on the loose in the Strip. I comped him a few Clovered El Cuervo’s- at least the coffees would be a good drinking temperature (better than the lattes anyway) by the time he got back. I’m thinking about filing a police report with the Strip’s new beat cop Elvis. I’m not done with this… not by a long shot.

  • Celebrity endorsement by none other than Kevin Smith, who happened to be in the shop the day they were filming and was responsible for one of the funniest moments in our history.

pop2.JPGKevin also mentioned some sweet-ass pancakes that he had next door at Pamela’s P&G Diner- and we’d have to agree. Love the Pamela’s crepe pancakes- with whipped cream, bananas, and syrup. He said some other things that were quite humorous but not really fit for mass consumption. I’m hoping to get my hands on the unrated version.

All in all a very cool video. Thanks to Pop City for including us! Also thanks to all our new friends from “Zack and Miri Make a Porno“. Everybody’s been really cool and we also appreciate all the business you bring our way.

Entrepreneurs- the Synesso Story

Two years ago when we were getting ready to open for business in the Strip District we didn’t really know much about the business of making coffee.  Like most customers, we only knew what we liked.  We had chosen a quality roaster based on a blind taste test of several local and national roasters.  That was a good first step- we certainly didn’t know how poorly this decision could have gone now that we have the benefit of hindsight.

Six months into our first year of operation a NY Times article came my way from a regular customer of ours.   It talked about the renewed emphasis on quality coffee making, and some of the shops in the NYC area that were leading the way.  It excited us to see the press take interest in our industry and we wanted to be a part of a similar “coffee revolution” in our hometown.    Around the same time another regular customer of ours came to us with word that a spot was available in the lobby of the Frick Building.  We checked it out and after a lot of thinking and running of numbers we decided to go for it.

Once we made the decision to open up shop #2, we needed to purchase new equipment.  Having the experience of shop #1 under our belts, the above mentioned article, and lots more research, we decided to turn to Synesso for our espresso machine and became the first shop in PA to install one.  We now have one in each of our shops.

mark and sandy of synessoWe bought the Synesso because it was temperature stable and would allow us to take our drink making to the next level.  The Synesso ended up being a dream to operate and the owners of the company, Mark and Sandy, have been a joy to work with.  When I have a question about my coffee, I’m a phone call away from the folks who have actually been to the origin farms.  When I have a question about my espresso machine, I’ve often spoken to an owner of the company.  Talk about eliminating the middlemen!

I never saw the following article before and came across it today online- it’s from a few years back.  The neat thing is that Synesso is a young company, too.  They had a dream and put a lot on the line to make it a reality.  It’s great to see good, hardworking people have success.

“Machines cannot get any better than this, in my opinion,” said David Schomer, owner of Seattle’s Espresso Vivace and an espresso expert who has used Synesso’s Cyncra machine for nearly two years.

“Mark risked his house to get this machine into the world, and I think that’s rather commendable, too.”

New Year’s Hours

Just wanted to post our New Year’s hours- we will be open New Year’s Eve until noon and closed New Year’s Day.  Normal schedule resumes on the second.

New Years Eve (Monday) - Both locations open 7am-12pm

New Years Day (Tuesday) - Both locations closed

Wednesday 1/2/08 -  Both locations open at 7am as usual
